Serves 10 people
For the Clementine Cordial (makes 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g granulated sugar
Ingredients for the Cocktail (yields 850ml, enough for 10)
400ml premium vodka
100ml classic gin
150ml peach liqueur
200ml citrus syrup (see above)
Whole cranberries, to garnish
Mandarin essential oil, for finishing
Directions
For the Cordial: Put all the components into a pan, heat until it reaches a gentle boil, stirring to dissolve. Then, turn off the stove and leave to reach room temperature fully. Pour into a clean bottle, cap it and store chilled, where it will keep for around a month.
To make Cocktail Base: Mix the specified liquids in a large bottle, let it rest for one hour, then filter it , ideally through a fine cloth, making it fully clarified.
To serve: Measure 85ml from the batch mix into a mixing glass filled with ice, and stir gently for one minute to chill. Strain into a chilled martini glass or equivalent, decorate with the cranberries and complete it with a quick spritz of the essential oil over the top.
